Freshman 15, I laugh in your face.

Recently I have discovered the wonder of Pinterest. It's been two days and I think it's safe to say that I am addicted already. Tonight I saw a post for No-Bake Energy Bites, and I decided that since I didn't want to be a "look only" pinterester, I would get out my measuring cups and make a yummy snack for me to grab before heading off to Pilates. I am staying away from the Freshman 15 like the plague. So far, I think I've done pretty well for myself. I am proud to say that I eat veggies with every meal, save breakfast, and I keep myself hydrated with good liquids. I've stepped it up since I've been here, and I plan to completely smash to pieces any myth that says I will get fat this year.

This recipe was super easy. I didn't have all the ingredients that were on the original recipe, but it's an energy ball...you can throw almost anything in there.
1 c. Oats
1 c. Shredded Coconut
1/3 c. Honey
1/2 c. Peanut Butter
1/2 c. Mini Chocolate Chips
1/3 c. Chopped Cranberries
1 tsp Vanilla
Stit wet ingredients, then mix in all the dry ingredients and refrigerate. Pull out, roll into balls, wrap up and stick back in the refrigerator!
I'm SO excited to eat these. I wrapped them up like little Hershey's Kisses, so I'll be opening up a little treat whenever I grap one. Only it's way healthier, so I win:)
